While I was at my niece’s house this past weekend, we went to the farmer’s market. Hers is WAY better than mine, even this early in the season. Yes, I am aware that I can buy fresh vegetables year-round at the grocery store, but there really is no comparison to locally-grown, freshly picked produce. So tonight for dinner I’ve made a radish/scallion salad, an olive/tomato/feta salad, and am serving steamed asparagus. It is so much easier to cook for a borderline diabetic in the summer! The best part is it’s healthy for me as well, so hopefully some of the weight I gained while on the series of hospital adventures will start coming back off.
