Not that I can really take credit for it, because I used a recipe for my side dish and based my main dish on another recipe, but I made the most fabulous dinner tonight that pretty much made my toes curl. Crab-stuffed chicken breasts with balsamic roasted eggplant on the side. Best part? So far under the 25 carbohydrate or less goal that I could have even served dessert! I’m really very pleased with myself, so I figured I’d brag a bit. Cooking is one of my personal joys, but it doesn’t always work out this well when I’m experimenting.
