The timing couldn’t better for my house, as my mother was recently diagnosed as near-critical borderline diabetic. Which means cooking with little to no carbohydrates, which means vegetables are definitely my friend! The farmers’ markets are booming, the local farm stands are busy, and asparagus is at the height of its short-lived season.
