In the northern hemisphere, we are just transitioning from spring to summer, and with it comes the best of the best local produce. The timing couldn’t better for my house, as my mother was recently diagnosed as near-critical borderline diabetic. Which means cooking with little to no carbohydrates, which means vegetables are definitely my friend! The farmers’ markets are booming, the local farm stands are busy, and asparagus is at the height of its short-lived season. Even if you’re allowed to eat whatever you want, try to make an effort to include as many vegetables as possible today…they taste good, and they’re good for you!
