I’m sure I’ve mentioned that while I was in the hospital my mother was diagnosed borderline diabetic. Thus far they are trying to control it with a change in diet, but in a couple of months she’ll be re-evaluated to see if it’s working. Consequently, my culinary skills have been put to the test on a daily basis, trying to make meals that have as few carbohydrates as possible. Usually, this means that my normal creations are no good, and I have to actually use recipes. Tonight, however, I made something up that was easy, incredibly tasty, and only had 5 cabs per serving. It would seem I’m getting good at this game, and I couldn’t be happier. It’s been killing me having to use other people’s recipes instead of making up my own.
