Cheesecake Day Beth Snyder July 30, 2011 Either you love cheesecake or you hate it…I don’t believe there is a middle ground there. Me, I love it. It’s kind of a pain to make, but I manage to turn one out a few times a year. I think my crowning accomplishment was the pumpkin-caramel swirl cheesecake I made for Thanksgiving dinner a few years ago. It takes two days to make, and is so rich you can’t eat more than a sliver of it without going into a coma, but it is amazing. However, for summer, I make one with crushed pineapple that’s really light (instead of all cream cheese in the filling, I use some whipped cream as well) as well as being no-bake.
