The News: Salads and Salmon and Fruit, Oh My! Edition

Why yes, I have lost my mind. Thank you for asking. I know I promised a few days ago to stop whining about the heat, but that was before I knew we were going to be in triple digits for multiple consecutive days. You know it’s hot when you’re drinking on average a quart of water every hour, with the occasional side trip to a glass of sweet tea or Gatorade, just to remain upright. So today I’m making a ton of salads again to have on-hand, but the bonus is my sister brought me several beautiful salmon fillets last night. A friend of hers caught it a couple of days ago, and gave them way too much, so I win. Tonight will be poached salmon with a horseradish-dill sauce. Poached because it’s the least hot option (if I could figure out how to do it in the microwave, I’d be all over it). The rest will have to go in the freezer, but I can deal with that.
