Spreadthat! Knife Ends Hard Butter Woes Beth Snyder August 26, 2014 One thing I refuse to compromise on, regardless of how many people or studies tell me it’s unhealthy, is butter. Real butter. Not margarine, not butter-like spreads… butter. There is always a stick in a glass dish on my counter, almost all year-round. But in the summer it tends to melt, because there is no air conditioning at my house. When the ambient temperature is 90F+ with relative humidity upwards of 75%, butter doesn’t stand a chance. So I (shudder) refrigerate it. There’s a recent article over at Gizmodo about that, in case you’re unfamiliar with how poorly that goes. Suffice it to say room-temperature butter is tasty and spreadable and delicious, while refrigerated butter has the consistency of hardened mortar and virtually no taste whatsoever. It’s even dishwasher safe! Sure, 20 seconds seems like a long time to wait, but if you’ve ever tried to spread cold, hard butter on anything, you know it’s really not too much of a sacrifice. And being able to get spreadable butter straight from the refrigerator in under 30 seconds is amazing to me! I usually end up sticking it in the microwave, but even in all the years I’ve been doing it, I have yet to find the sweet spot between too hard and completely melted.
