For some reason, it never occurs to me I can use my slow cooker in the summer. In my head, the only meals that come from a crock pot are fall and winter offerings like pot roast or stew or chili, which I know is stupid. So today I’ve broken with all tradition, and I’m making my bastardized version of corned beef and cabbage boiled dinner. I can’t be more precise than that, since I’ve morphed about three traditional recipes into one and it has become my own. Corned beef, cabbage, red potatoes, turnips, carrots, onions, and garlic, simmered for hours and hours. Because I can. And also I needed the space in my freezer…that corned beef brisket was nearly five pounds!
